Life has been extremely hectic these past few weeks. Dead week, finals week, graduation, checkout… Although I am no longer a student, as a university employee, it still feels as my life is divided in semesters. Now that classes are out for winter break, work is finally slowing down…maybe too much!
One thing I absolutely love about my office is the lovely people I work with. We’re such a happy and social bunch. Almost every month we organize a potluck lunch for birthdays, holidays, or any special occasion. Since Christmas is upon us, and this was our last full week of work before leaving for a well deserved winter break, we went all out and had a Christmas party and a Christmas cookie exchange.
Every year for Christmas I make Italian sugar cookies, otherwise known as Biscotti di Pasta Frolla. They are delicious, delicate sugar cookies which taste even better with a little bit of jam or Nutella on it. This year however, I wanted to spice up things so why not make Nutella biscotti!
The awesome thing about these cookies is that you do not need to ice them (I am TERRIBLE at icing things), just cut them in fun shapes, sprinkle some powdered sugar on them and… TADA! They’re ready to be devoured.
Fun fact… you could use these cookies for any occasion. Just change the shape according to your liking/holiday and you are set.
