Woah! January is almost over. I can hardly believe it. So far this year has been full of great beginnings and I am so pumped to see what God has in store for this 2016.
Last year was an incredible year; yet, graduating, starting a new job, getting married, and figuring out this whole “adulting” thing was very hard. Let’s say there was lots of stress eating accompanied by hours of seating at a desk, which my body did not enjoy. Moral of the story? I gained 18 lb.
Although many say they cannot see the difference, I cannot just see it, I can feel it. My body is so much slower, heavy, and my muscles are so tight. So new year, new me!

This year, I decided to take action and work toward a healthier body and lifestyle. Yoga, being active, a better sleeping schedule, these are only some steps one must take to be healthier, but nothing bets a healthy diet. No, I’m not giving up carbs (that would last less than 2 hours!), But I am watching what I eat. Literally.
The first day of 2016, I downloaded myfitnesspal and a bunch of other handy apps on my phone, and started counting my calories intake. Being a very visual person, physically seeing the amount of calories my body usually intakes or burns throughout a day really shifted my way of thinking. I always known some foods contain more calories than others, but seeing how easy and quick you can eat all the calories you worked hours to burn off… EUREKA! A light bulb finally turned on in my brain.
With knowledge comes awareness… and a few guilt trips. So now, I am searching for new ways to enjoy my favorite dish without feeling I like I throwing out of the window my hard work at the gym.
My husband and I LOVE pesto! Yet, that sucker contains so many calories, so every bite equals a guilt trip. With every bite I feel that same burn you feel while doing squats…. and dinner is ruined. But it should not be like that. With a little research and trial and error, I have found the calorie savvy and yummy alternative to traditional pesto. Kale pesto. I know, people have been bragging about kale for years. I guess it is time for me to jump on the bandwagon as well.
As for pasta, I still eat that; but if you are gluten free, or you are watching your intake of carbs, you can always substitute pasta with zucchini spaghetti, which in this case pair wonderfully with pesto. If you are vegan instead, you can substitute parmesan cheese with this vegan parmesan recipe – it’s actually perfect for pesto.

- 1 de-stemmed bunch kale (1/2 lb)
- 1 clove of garlic
- juice of 1/2 lemon
- 1/3 cup almonds
- 4 tbsp parmesan cheese (you can use vegan parmesan)
- 3 tbs olive oil
- 1/4 cup cooking water
- Wash and de-stem kale. Bring a pot of salted water to boil and cook kale for roughly 3 minute. Collect 1/4 cup of cooking water. Drain kale and press out any excess water.
- In a food processor, mix almonds, garlic, and parmesan cheese. Add the kale and the boiling water and mix until smooth.
- In a medium bowl, mix the lemon juice and olive oil. Mix in the content from the food processor. If too thick, add some extra water.
